When will the Phonak Ultra's be able to order

The hardware hasn’t changed it is just a software upgrade. So if you order now you should get the updated version.

The Ultra is merely a brand refresh of the existing Sphere because of the release of the 2.0 software branded as Ultra. Phonak’s marketing confuses and somewhat misleads customers. I ordered my Spheres a few days ago, and all current Sphere owners can see their audiologist asap for the firmware update. Same product, just a new word added for marketing sake. It is not a new platform..
